Simon Thibault is an Acadian journalist, editor, and radio producer who looks at where food and culture intersect, and the stories found within those places. Apples were an importanty food and beverage source for the Acadians and Simon has traced Heritage varieties of the community alongside his own heritage. This interest has expanded into the large assortment of heritage varieties at risk of survival in Nova Scotia.
